More Chocolate Tastings
The last time I did a rundown of my latest chocolate samplings, I had some Swiss and Italian friends (you know who you are!) get peeved due to the lack of representation from those countries. I will note that in my latest list, there is one Swiss-owned chocolate. Before you get too excited, I also must disclose that it is made in France.
Cafe Tasse (Belgium) - 54% cacao - Sweet. Not as nutty and as flat tasting as the Cafe Tasse 77%. Decent eating chocolate (I wouldn't bake with it), but still too thick to snap easily.
Cote d'Or (Belgium) -Noir de Noir 56% - I bought this thinking it was darker, but was pleasantly surprised. Shiny, with a nice snap. Mouth feel decent, but slightly waxy. Sweet, with good balance between vanilla and nut. Not terribly acidic.
Lindt (Switzerland/France) -85% cacao - Firm snap. Great mouth feel. Lovely lemony taste.
Valrhona (France) - Le Noir Extra Amer 85% - An excellent eating chocolate. Gorgeous patina and mouth feel, with a complex flavor.

My BIL was just in town so we have 20 pounds of Swiss chocolate. This is a huge problem!
